1/2 cup walnuts
4 medium beetroots or large (the same size!)

10 - shallots
8 cloves garlic
2 lbs chestnut mushrooms / cremini
1 - chia or flax egg
1 lb spinach (weight assumes leaves only)
- - salt and pepper
3 tsps dried rosemary
1/4 cup white wine
1/4 cup nutritional yeast flakes
1/4 cup breadcrumbs approx.
1 - sheet frozen (vegan!) puff pastry*
1 tbsp soymilk
- - black sesame seeds or poppy seeds, to decorate
1 cup balsamic vinegar , for balsamic reduction
1/2 cup raw cane sugar , for balsamic reduction
